It's easier than you think! Call the farm office at 309-829-9325. Let us know when you'd like to get beef in your freezer! We will check our availability and offer you a spot on the list, and if that spot works for you, we'll ask for a deposit to reserve your beef. ($200 for a whole, $150 for a half, and $100 for a quarter). We will let you know the date we deliver to the locker. You'll receive an invoice from us that reflects the dressed weight (See next FAQ) of your beef. Our price per pound on dressed weight changes weekly based on the current cattle market. It has ranged from $2.90/lb to $4.20/lb. This does not include processing. Your beef will hang and dry age for 21 days. The locker will reach out to you to talk you through your personal cutting instructions and then call you to let you know your beef is ready for pick up. Take your laundry baskets or big coolers with you, and you'll pay the locker directly for the processing when you pick it up.
EXAMPLE: A whole live steer that weighs 1820# will produce a dressed weight of approximately 1088#. At $3.10/lb, the cost for this whole beef, payable to Funk Farms. is $3372.80. Processing is an additional cost paid directly to the locker at pickup, and varies greatly depending on your cutting instructions and choice of packaging. On average, a locker will charge between $0.70-$1.00/lb dressed weight for processsing. On this whole beef example, processing would cost between $760-$1100. Sounds like alot up front, HOWEVER, you'll be filling your freezer with approximately 700# of Premium Beef at $6-$7/lb. This, in addition to ground beef and roasts, includes all the high-end primals like Ribeye Steaks, Filets, New York Strip Steaks and other specialty cuts. The beauty of the process is that you don't have to commit to a whole beef. Buying 1/4s and 1/2s offers the same incredible savings compared to buying individual retail cuts.

Great question. Our price is based on the ‘dressed weight’ also known as the ‘hanging weight’. This is the weight of the animal immediately after slaughter, before it is taken into the cooler to hang, and before it is broken down into your preferred table-ready cuts. The dressed, or hanging weight, is an average of 60% of the live animal weight. People often wonder why the beef they pick up from the processor weighs less than the "dressed weight". The 21-day dry-aging process, in addition to removal of bone and excess fat, results in the client taking home about 60% of the 'dressed weight'.

ALSO a great question. Buying a large amount of our Premium Beef requires some freezer space. A good rule of thumb is to plan for 1 cubic foot of freezer space for every 30-35 pounds of packaged beef. This applies to chest freezers. An upright freezer requires 1.5-2 cubic feet for 30-35 pounds of beef.
EXAMPLE: Our 1/4s yield between 150-200 pounds of Premium Beef, depending on the live weight of the beef, and your personal cutting instructions. To be on the safe side, we reccommend having an 8-10 cubic foot chest freezer to allow plenty of room for our 1/4s. Our packaged beef is not processed into unform shapes or sizes. It takes a skilled tetris player to organize all the different cuts into a freezer, so allowing for extra space is a good idea if you have the room.
Of course! We encourage you to try a few individual cuts to make sure you're satisfied with our premium beef. All of our in-stock cuts and grind are sold by the pound.
